There are three main differences between summer and winter tyres: their structure, their rubber compound and their tread pattern.
Winter tyres have a higher rubber content than summer tyres helping them to keep supple in the colder weather. They give a better grip to the road and have many tiny grooves which help to dispel surface water. The tread is deeper providing better grip when there is snow on the road.
Summer tyres provide better all-round performance in the warmer months. They have a relatively hard compound that softens in milder temperatures but is easily adaptable to wet weather. The tread is specially designed to reduce the risk of aquaplaning. Summer tyres do provide good grip in most weather but are not suitable for harsher, colder weather due to their harder rubber. Summer tyres are also more fuel-efficient as they produce less friction on the road.
